The "Grandfather's Ham Noodles" menu is a fusion of Thai and Chinese cuisine.
Influenced by the food culture of Thai-Chinese people, this dish combines flavors and ingredients from both countries.
The origin of this menu is related to the adaptation of the culinary culture from southern provinces of China (such as Yunnan Province) that mainly uses rice vermicelli and fragrant soup, and then adapting it to Thai ingredients, such as using ham or salted pork, which are pickles familiar to Thai food preservation culture. In addition, other ingredients such as vegetables, herbs and Thai seasonings are also used to create a unique taste.
A recipe passed down from great-grandfathers and refined by grandmothers, the soup may be slowly simmered until the sweetness of the bones and herbs is obtained, mixed with salty, fatty ham, making the taste of this dish rich, aromatic, and diverse.
